You may think of ramen when you think of Japanese noodles. However, in Japan, udon is among the most popular forms of noodles. Udon noodles are thicker and chewier than ramen noodles, and the soup has a milder flavor, especially in the Kansai region (West Japan, like Osaka and Kyoto). The photographs below show two varieties of udon: conventional udon and zaru udon. Zaru udon differs from regular udon in dipping the noodles into the sauce.
